Very aromatic with a sweet licorice-mint flavor. Leaves and flowers can be used fresh in salads, combined with fruits, and in Italian dishes in place of fennel. Also can be used fresh or dried in teas. Great for sore throats and coughs. Excellent bee and butterfly plant. Usually annual, but will re-seed.

Large plants with thick, hairy leaves that taste like cucumber. Usually grown for its beautiful sky-blue flowers that also taste like cucumber and look so pretty in salads or used as a garnish. Excellent bee plant. Annual.

Fennel, Bronze

Annual
This is a non-bulbing type of fennel that is used for its leaves and seeds. The leaves are a gorgeous reddish bronze color and are a tasty addition to salads, cole slaws, and dressings. I like to use it in tea too. The seeds can be used in place of anise seeds in baking. Swallowtail butterfly caterpillars love the leaves!

The best lemon herb for desserts. Also great in tea and in Asian dishes in place of lemon grass. Grow this one in a pot and bring indoors in the winter. You’ll have it for years! Annual outside.

I love this herb for homemade soups! Use the young leaves sparingly for a rich celery-like flavor. Cut back after flowering to keep young stems coming. Perennial.

In the same genus as oregano, but totally different in aroma and flavor. Has a piney, delicate scent and the sweet balsam flavor goes well with Italian dishes, corn, and potatoes. I am hooked on this herb! Annual.

Nasturtium

A pretty garden plant that has edible leaves and flowers. The leaves look like mini lily pads and the flowers are bright red, orange, yellow and peach. Use them in salads and appetizers. They have a peppery, watercress-like flavor. Annual.

Oregano, Kent Beauty

Annual
Kent Beauty oregano is grown in the herb garden mainly as an ornamental. It has a beautiful trailing habit that lends itself well to hanging baskets, planters, and garden walls. The blue-green leaves are oval shaped and silver-veined. The pink bracted, hop-like flowers cover the plant from summer through fall and are the main attraction. They can be used fresh or dried in flower arrangements. The aroma is milder than culinary oregano, but still very nice. Tender perennial, but can be brought in for the winter, then cut back before setting outside in the spring.

Leaves have the aroma and flavor of pineapple. Grows into a 3 foot tall bushy plant with dark green leaves and spikes of scarlet red flowers. Leaves used mostly for tea and lemonade. Excellent butterfly and humming bird plant.
